Effortless Crayfish gratin

Crayfish is a noble product, with a delicate flavour. Best serve cooked simply.

· Easy, 30 min preparation - 15 min cooking
Ingredients (2 people)
· 25 cl of white wine
· 2 garlic cloves crushed
· 30 gr butter
· 1 tea spoon Oil
· 1 white onion finely diced
· 60 gr flour
· 15 cl of crème fraiche
· 30 gr grated cheese
· 1 Crayfish
· Parsley chopped

1st STEP :
After poaching the Crayfish, cut it in half. Remove the flesh from the tail and keep the carapaces.
2nd STEP :
Saute garlic and onion in the butter and a bit of oil, Diced the Crayfish flesh and fry it until the Crayfish is lightly coloured.
Sprinkle with flour and deglaze with white wine. Add the crème fraiche.
Leave to cook for 3 to 4 minutes over low heat.
3rd STEP:
Garnish the preparation with half of the grated cheese, Garnish the Crayfish shell with the preparation. Sprinkle with remaining grated cheese and brown before serving.
Sprinkle with parsley and serve.
